This is my absolute favourite desert – my mum used to make rhubarb and apple crumble and as an adult I adapted the recipe, so now we have a healthy rhubarb and apple crumble!
Here is the recipe;
Rhubarb/Apple mixture
Crumble mixture;
1. Cook the rhubarb and apple
Add the rhubarb to a pan on medium heat, with 1/2 cup water (no more water – as rhubarb loses a lot of water and so you don’t want too much!) Make sure you stir this ongoing, as the rhubarb can stick to the pan pretty quickly.
Once it’s softened add the apples, keep mixing whilst on medium heat until it’s all cooked through.
Add this mixture to a baking dish.
2. Make the Crumble
Add all the dry crumble ingredients into a bowl. Head the butter, and add it on top, stirring it all through with a wooden spoon. Taste along the way to make sure you’re happy with the sweetness!
Add this mixture on top of the rhubarb/apple mix, and cover it completely.
Pop into the oven for 40minutes, and take out once the top has browned nicely.
Be careful, as it’s really hot! So you’ll need to leave for 10 mins or so before eating.
Serve however you like! Vanilla ice-cream goes really well with it.
